Sweet and Spicy Kielbasa Bites

Looking for an easy game day appetizer right in time for the Super Bowl? Well I have got you covered with these Sweet and Spicy Kielbasa Bites. This appetizer uses minimal ingredients and is done in less than 20 minutes!

NOTES:

  • After I slice my jalapeños, I like to rinse them well. This will help remove the seeds and make them a little less spicy. If you like the heat you can keep the seeds in, just warning you it could get HOT! I sliced my jalapeños thin using a mandoline.

  • You can use fresh or frozen pineapple. I have used both before, and either works! Buy pre-cut pineapple if you want to make it easier on yourself.

  • Make sure the drain any excess fat from the skillet before adding in the Tamari mixture.


Ingredients:

  • 14 oz Penderson Farms kielbasa, sliced in 1 inch rounds

  • 1/2 cup low sodium Tamari

  • 1/3 cup rice vinegar 

  • 1 tsp hot honey 

  • 2 garlic cloves, minced

  • 1 jalapeño, sliced thin w/ mandoline and seeded

  • 2 cups pineapple, cubed (fresh or frozen)

Directions:

  1. In a small bowl, combine the tamari, garlic, vinegar and hot honey. If you don’t have hot honey you can use regular honey + some chili flakes.

  2. Add the kielbasa to a skillet and sauté each side for 3 minutes, until browned. You don’t need to add any oil because the fat will render and oil up the pan. Remove the browned kielbasa from the pan, place on a paper towel to soak up the fat and discard any drippings from the skillet. 

  3. Next, pour the tamari mixture into the skillet and bring to a boil to thicken. Should take a few minutes.

  4. Add the pineapple to the boiling sauce and let cook for 3 minutes, stirring often.

  5. Return the kielbasa to the pan, and combine with the pineapple and sauce. Turn the heat to low, cover and simmer for 10 minutes. 

  6. Assemble the Sweet & Spicy Kielbasa Bites on a toothpick. Layer the jalapeño first, then the pineapple and then the kielbasa. Repeat until you use all the kielbasa.

  7. Serve on a platter for everyone to enjoy while you watch the Super Bowl. I SWEAR THESE WILL GO FAST.
