Protein Pancakes

I love a good pancake, but there isn’t much nutritional value to them. So I added a little protein powder and topped with some fruit and little almond butter, instead of maple syrup!

Ingredients:

  • 2 eggs

  • 40g of vanilla protein powder (two scoops)

  • 1 ripe banana, mashed 

  • 2 tsp ground flax  

  • 1 tsp vanilla extract 

  • 1/2 tsp cinnamon 

  • 1/4 tsp baking powder  

For garnish:

  • Strawberries

  • Banana

  • Almond Butter

Directions:

  1. Add ingredients to a blender. Mix on high speed until smooth.

  2. Preheat non-stick skillet to medium heat. Spray with cooking spray. Add 2 heaping tablespoons of the batter and spread around to form a medium sized pancake. Cook for 4 minutes on the first side or until edges start to harden and bubbles start to form on the surface.

  3. Flip and cook for an additional 1-2 minutes on the other side.

  4. Top them up with with all the things.
