Chicken Sausage, Bell Pepper and Sweet Potato Sheet Pan Dinner
Any meals that creates minimal dirty dishes I am a fan of… and this recipes only dirties ONE SHEET PAN. And if you put parchment paper down first, it makes the cleaning super simple.
This recipe serves about 6. The next day I served it for lunch with a fried egg on top and it was delish.
Ingredients:
12 oz chicken sausage, sliced
1 large sweet potato, peeled and cubed
1 yellow pepper, sliced
1 red pepper, sliced
1 orange pepper, sliced
1 head of broccoli, cut into small florets
1 tsp cayenne pepper
2 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp avocado oil
Salt/pepper to taste
For garnish:
Arugula
Avocado
Chipotle Bitchin’ Sauce
Directions:
Preheat oven to 425 F. Line baking sheet with parchment paper.
Add sweet potato to bowl with avocado oil, cayenne pepper, salt, pepper, half of the garlic powder and toss to coat.
Put the seasoned sweet potatoes on the lined baking sheet and bake for 10 minutes.
In the same bowl add the sliced chicken sausage, peppers and broccoli. Spray with cooking spray and season with the remaining garlic powder, onion powder, oregano, salt and pepper. Toss to coat.
After the sweet potatoes have baked for 10 minutes, add the sausage and veggies to the baking sheet and mix with the sweet potatoes. Put back in the oven for another 30 minutes. Mixing halfway through.
Pile over some arugula, top with avocado and Bitchin’ Sauce.
