Intant Pot Chipotle Lime Shredded Chicken

Nothing easier to make than shredded chicken in the Instant Pot. This was one of the first things I learned to make in the Instant Pot years ago and I feel like I have totally mastered it.

Just throw the ingredients in the IP, close the lid, set the timer and WALK AWAY. Dinner is magically made for you!

There are many different flavors you can make the chicken, this time I went with Chipotle Lime and I love how it turned out. I decided to throw the chicken in some Siete hard taco shells, but you could use the chicken filling in soft tacos, a taco salad, a bowl or enchiladas. It’s super versatile!

You can also make this in the slow cooker. Just place all ingredients in a slow cooker, add and additional ½ cup chicken stock and cook on low for 4- 5 hours.

Ingredients:

  • 1.5 lb chicken breast

  • 1.5 cups fire roasted red salsa (I used Casa Sanchez from Whole Foods)

  • 2 tbsp chipotle peppers in adobo sauce (I remove remove seeds from peppers and finely chop. If you like it spicy, keep the seeds in the peppers and add additional tbsp.)

  • 1/2 yellow onion, diced

  • 2 limes, juiced

  • Salt/pepper to taste

Directions:

  1. Add chicken to the instant pot. Season with salt/pepper.

  2. Cover with chipotle peppers, salsa, lime juice and onions. Give everything a good stir so the chicken is covered in the salsa mixture.

  3. Put the lid on. Hit manual, set timer to 10 minutes on high pressure.

  4. Once timer is done you will naturally release pressure for 10 minutes. Once ten minutes is up, manually release any remaining pressure, then shred the chicken with two forks. You an also use a handheld mixer, or a Kitchen Aid mixer, I just hate dirtying more dishes.
