Berry Chia Protein Pudding

I feel like we eat a ton of eggs for breakfast in our house. So I like to switch it up sometimes and try breakfasts that don’t use eggs, but are still packed with healthy fats and protein. It’s also perfect to have on hand as a mid-day healthy snack.

This chia seed pudding is SO EASY to make. I threw everything in a mason jar at night and it was ready to go the next morning. It makes about 3-4 servings, so perfect for meal prepping too!

Ingredients:

  • 1.5 cup strawberries, diced

  • 1.5 cups of almond milk

  • 1 scoop of vanilla protein powder 

  • 6 tbsp chia seeds

To garnish:

  • Rasberries

  • Coconut flakes

Directions:

  1. Combine 1 cup of strawberries, almond milk and protein powder in a large mason jar. I used an immersion blender, but you can also blend in a regular blender. You will want to blend the berry mixture until smooth. This will make a little strawberry milkshake like liquid that will be the base of our pudding.

  2. Add the chia seeds to the berry liquid and mix well until all of the chia seeds are incorporated into the milk. Wait a few minutes for the chia pudding to settle and mix again. This will make sure there are no clumps! Then throw in the remaining 1/2 cup of strawberries. Mix again.

  3. Close the mason jar and place in fridge for 2 hours to 7 days. The chia seeds should have absorbed the milk and is ready to eat!

  4. Top with raspberries and coconut flakes.
