Healthy Cookie Dough Bites

What’s better than raw cookie dough? HEATHY and PROTEIN PACKED cookie dough! These are vegan and safe to eat when raw. They are also gluten-free! I used Lily’s dark chocolate chip so they are sugar-free and sweetened with stevia. They are also dairy-free.

I am not a baker, but these are super simple and quick to make. You can whip them up in less than 20. Then store in the fridge for the week for a healthy dessert. My husband is obsessed!!!

Ingredients:

  • 3/4 cup coconut flour

  • 1 serving of plant based vanilla protein powder 

  • 1/4 cup melted coconut oil

  • 1/2 tsp almond extract

  • 1/2 tsp vanilla extract

  • Pinch of salt 

  • 2 tsp oat milk 

  • 1/2 cup DF mini dark chocolate chips

For the chocolate shell:

  • 1/2 cup DF dark chocolate chips 

  • 1 tbsp coconut oil 

Directions:

  1. In a large mixing bowl combine the coconut flour, protein powder, coconut oil, almond + vanilla extract, salt and oat milk. Using a spatula mix well until it’s incorporated and starts to form in a ball. If your batter seems too dry you can add a splash of oat milk.

  2. Next add the chocolate chips and combine well.

  3. Scoop the dough with a cookie dough scooper and use your hands to form the cookie dough into small balls and place on a large plate. 

  4. Put the cookie dough balls in freezer for 15 min. 

  5. Once the cookie dough bites have hardened, put the chocolate shell ingredients in a microwave safe bowl. Microwave for 1 minute until the chocolate chips and coconut oil are melted. Mix well until chocolate sauce is smooth.

  6. Drop the cookie dough bites in the chocolate sauce and toss around to coat all sides. Place on a parchment lined plate and sprinkle a little salt on top of each cookie dough bite.

  7. Place in the fridge for 15 minutes for the chocolate to harden. Then enjoy! You can add to a Tupperware container and store in fridge for a week. (If they will last that long….) You can also store in freezer and they will last up to a month!
