Goat Cheese Stuffed Dates

Here is the PERFECT fall appetizer. Looks very gourmet but actually super simple to make and looks quite impressive when served! This recipe makes about 20, but if you need more just double the recipe! 

Ingredients:

  • 10 dates, halved and pitted 

  • 4 oz goat cheese 

  • 1/3 cup pistachios, crushed 

  • 1/4 cup Pomegranate seeds 

  • Balsamic glaze 

  • Mint leaves

Directions:

  1. Cut dates in half and remove pits. Discard pits and line dates on a cutting board. 

  2. Roll about 20 balls of goat cheese. They should be small enough to fit inside of the date. Then crust each goat cheese ball in the crushed pistachio pieces. 

  3. To assemble lay a whole mint leaf inside each date. Stuff each date with a goat cheese ball. Add a dollop of balsamic glaze on top and garnish with a pomegranate seed.
