Dairy-free Caramelized Onion Dip

Nothing screams game day more than French onion dip. But cranked it up a notch by keeping it DF and adding caramelized onion and crispy bacon bits. Also tried out Siete’s new gluten-free potato chip and they are amazing! I also use Kite Hill’s dairy free cream cheese. It’s my favorite!

Ingredients:

  • Dairy- free sour cream 

  • 2 large yellow onions, thinly sliced

  • 1 tbsp butter

  • 1 tbsp balsamic vinegar

  • 10 pieces of bacon, cooked and diced

  • 2 tbsp chives, diced

  • 1/3 cup parsley, diced

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • Salt/pepper to taste

Serve with:

  • Potato chips

  • Carrot sticks

  • Celery sticks

Directions:

  1. Set oven to 400 degrees F. Put bacon on baking sheet over some parchment paper. Bake for 20 minutes or until bacon is crispy. Let cool before dicing into small pieces.

  2. Melt butter in skillet over medium high heat. Add the onion slices and stir to coat the onions with the butter. Reduce the heat to med/med-low to prevent the onions from burning. Spread the onions out evenly over the pan and let cook, stirring occasionally. The trick is to leave them alone enough to brown, but not so long so that they burn. Let cook for 30 minutes, or until they are caramelized,  stirring every few minutes. The last 5 minutes add the balsamic vinegar to deglaze the pan. Let the caramelized onions cool completely. 

  3. Add the sour cream, caramelized onions, chives, bacon, parsley, onion + garlic powder and salt/pepper to a bowl and combine well. Refrigerate for 30 min before serving. 

  4. Garnish with more chives and serve with Siete kettle cooked potato chips and a side of veggie sticks.
