Sloppy Joe Stuffed Sweet Potato

Ingredients:

  • 1 lb organic lean grass-fed beef (I used 93/7)

  • 1/2 onion, finely diced

  • 1 red pepper, finely diced

  • 1 green pepper, finely deiced

  • 2 garlic cloves, minced

  • 1 tbsp ground cumin

  • 1 tsp Smoked paprika

  • 1 tsp onion powder

  • 1 tsp chili powder

  • 1/2 tsp garlic powder

  • 1/2 tsp Ground mustard

  • 1/4 tsp pepper

  • 1/4 tsp celery salt

  • 3 tbsp tomato paste

  • 1 tbsp coconut amino

  • 1 tbsp spicy brown mustard

  • 1/3 cup water

    Directions:

  1. Scrub sweet potatoes, and prick with a fork 4-5 times.

  2. Place 3/4 cup of water in the Instant Pot insert, and place the trivet on top. Arrange your sweet potatoes on the trivet.

  3. Place the lid on the Instant Pot and set the timer to 20 minutes. (The time will be based off the size of your potatoes. My sweet potatoes were medium sized.)

  4. Once, the timer goes off allow pressure to release naturally for 10 minutes, then carefully release the remaining pressure.

  5. While the sweet potatoes cook, sauce the onions, garlic and peppers over medium heat in some avocado oil. Let cook for about 5 minutes, stirring occasionally.

  6. Push the veggies to one side of the pan, and add the ground beef. Brown the ground beef for about 7 minutes, crumbling the beef up into small chunks.

  7. Once the meat is no longer pink, combine the meat and veggies and add the spices and tomato paste. Saute or about 5 minutes.

  8. Next, add the coconut aminos, dijon, and water. Bring to a boil then turn heat down to low, cover and let simmer for 12 minutes.

  9. Once sweet potatoes are done, carefully remove from the IP. Slice them lengthways and stuff with the sloppy Joe mixture. I topped with avocado and some ranch.
